Ghanaian ground nut stew
- 3 cups water
- 1 zucchini, stemmed and chopped
- ¾ cup chopped okra
- 2 sweet potatoes, peeled and chopped
- 1 onion, peeled and chopped
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 teaspoon ground ginger
- ½ cup peanut butter
- ½ teaspoon hot red pepper flakes
- 2 tomatoes, stemmed and chopped
- 1 cup tomato paste
- Cooked white rice for 4, for serving
- 2 hard boiled eggs, peeled and chopped, for serving
In a large pot, bring water to a simmer. Add zucchini, okra, sweet potatoes, onion, salt, black pepper, and ginger. Stir well. Cover and cook until all vegetables are tender (about 15 minutes). Add peanut butter, red pepper flakes, tomatoes, and tomato paste. Stir well, cover, and simmer on low heat for about 15 minutes. Serve over white rice and top with eggs.
