St. Joseph’s Cream Puffs


For the cream puffs:

1 C. Water
1/2 C. shortening
1/8 t. salt
1 C. flour
3 eggs
1 T. sugar
1 T. grated lemon rind
1 T. grated orange rind

For the filling, mix the following ingredients:

one 15 oz. container ricotta cheese
1/2 C sugar
1/4 C cocoa powder
1/2 tsp vanilla

Add shortening and salt to water; stir over medium heat until mixture boils. Lower heat, add flour all at once. Stir vigorously until mixture leaves the sides of the pan. Remove from heat and beat in 1 egg at a time. Beat in sugar and rinds after beating in eggs. Drop heaping tablespoonfuls of batter onto ungreased baking sheet. BAKE in preheated oven 450 F. oven for 20 minutes. Reduce temperature to 350 F. and bake for 20 minutes more. Remove and cool. Slice off top, remove any excess inside dough, fill, replace top and dust with powdered sugar.
